OUR RATIONALE FOR PERMITTING BUTTER ON A DAIRY-FREE DIET
We avoid dairy because my daughter & I tested positive for reacting to casein, which is one of the proteins in dairy. Since butter is mostly fat, it's a safe assumption that the casein in butter is likely negligible. In 14 grams of butter (1 Tbsp), 12 of those grams are fat, so there’s only a minuscule amount of casein/protein present in butter. Purchasing Ghee or making your own clarified butter is the safest option if you're intolerant to casein & don’t want to take any risks.
