This flavorful soup is my mom’s creation. Being in the kitchen has never come easy for me or her, so when we prepare something that’s tasty, it feels like an amazing accomplishment. We’re proud of ourselves for growing in the area of culinary arts & hope you also choose to challenge yourself in developing skills that aren't natural talents.

1.  Sauté the following ingredients in a stockpot until tender & then remove from the pot:

  • 1 Tbsp Olive Oil
  • 3 Carrots, diced
  • 1 Onion, diced
  • 4 Cloves of Garlic, peeled & minced
  • several Mushrooms, sliced
  • Salt & Pepper

2.  Place the following ingredients in the stockpot, bring to a boil & then simmer on medium low for at least 25 minutes. 

  • 8 Cups of Chicken Broth
  • 2 Cups of Diced Chicken 
  • 2 Zucchini, diced
  • 1 tsp Basil
  • 1 tsp Oregano 
  • 2 Tbsp Tomato Paste
  • 2 Tbsp Patak’s Garlic Relish (If you can't find this unique product, don't stress. The soup still tastes yummy without it. Just get creative with what's in your cupboard, substituting with garlic, turmeric, coriander, ginger &/or other spices you have.)

3.  A few minutes before serving, return the Cooked Mushrooms & Vegetables to the pot & add the following:

  • 1-2 Cups Fresh Spinach
