MIMI’S MODIFIED MEATLOAF


Throughout my entire adult life, I’ve attempted to make a meatloaf as yummy as my mother-in-law’s! I think I've finally come close & now it’s even Gluten Free!

1. Sauté 1 chopped Small Onion in Butter or Cooking Oil. 

2. In a mixing bowl, stir together the following ingredients:

  • the Sautéd Onions
  • 1 lb of Ground Beef
  • 1 Egg
  • 1 Slice of Wet Gluten-Free Bread or 1/3 Cup of Almond Flour
  • 1/4 Cup of Tomato Sauce
  • 1/4 Cup of Ketchup
    We prefer the taste & ingredients of Cucina Antica’s Organic Ketchup. It tastes sweet, yet doesn't contain corn syrup & only has 2 grams of sugar per serving. 
  • 1 1/2 tsp Worcestershire
  • 1/2 tsp Salt
  • 1/4 tsp Garlic Salt
  • 1/4 tsp Pepper

3. After pouring into a Loaf Pan, cover the top with more Tomato Sauce &/or Ketchup.

Bake 1 hour at 350°F.
