PALEO APPLESAUCE MUFFINS

1.  Mix the following Dry Ingredients together in a Large Mixing Bowl. 

  • 1 1/4 Cup Almond Flour
  • 1/3 Cup Coconut Flour
  • 1 1/2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Baking Soda
  • 1/4 tsp Allspice
  • 1/4 tsp Salt

2.  Place these Remaining Ingredients into a Blender. Blend until smooth. 

  • 10 Dates (pitted)
  • 3/4 Cup Applesauce (unsweetened)
  • 1/3 Cup Raisins
  • 3 Tbsp Coconut Oil
  • 2 Tbsp Melted Butter
  • 2 Tbsp Coconut Sugar
  • 1 tsp Vanilla
  • 5 Eggs 

3.  Pour the Blended Ingredients into the Mixing Bowl & combine with the Dry Ingredients.

4.  Stir in 1/2 of an Apple, Chopped.

5.  Fill 12 – 16 Muffin Liners.     

Bake in Muffin Tins at 350°F for 30 - 32 minutes.
As hard as it may be, let muffins cool before serving, or they will stick to the liners.
